In 2014, Aryan Malhotra left a Michelin-starred kitchen in Paris to return to New Delhi with one idea: build a restaurant where the fire was the centrepiece, not just a tool.
He found a 19th-century cellar in Lodhi Colony, stripped it back to brick and timber, and installed a custom wood-burning hearth that has been burning every evening since opening night.
The name Aurum — Latin for gold — was chosen not for luxury, but for warmth. The warmth of fire, of hospitality, of a meal shared with people you love.
